Tippling Club

Fine dining redefined, Tippling Club has been a pioneering force in Singapore’s dining scene since its launch in 2008 with Chef-Owner Ryan Clift’s brand of modern gastronomy and signature cocktail pairings.

The restaurant serves dinner degustation style, where customers have a choice between the five-course Classic and ten-course Gourmand menus with optional wine and cocktail pairings.

The Gourmand menu includes Mangalica Pork Collar, where the robustness and rich marbling of the prized Hungarian breed is balanced with delicate Japanese elements. The confit pork collar is served with vegetables pickled in nuka (rice bran) and a miso and yuzu curd, and then finished with cinnamon-infused dashi.

Ryan’s culinary career began at the early age of 14. He trained under some of the world’s greatest chefs including Marco-Pierre White, Peter Gordon, and Emmanuel Renaut, before serving as Head Chef of Shannon Bennett’s critically acclaimed Vue de Monde.
